Amontillado means “in the style of Montilla” – which is where this fascinatingly complex wine is made. The Carlos VII has been aging for more than 15 years in the traditional Solera System, gaining complexity and full, round, aromas while still retaining the freshness of its origins as a Fino. A harmonious blend of finesse, elegance and age. Made from the Pedro Ximenez grape, not the more common Palomino, try this with a smoked cheese, such as Idiazabal.
